Smoke & Ember started in 2012 when founder Ray Callahan dragged an offset smoker into his Zephyrhills driveway and started feeding the neighborhood every Saturday. What began as a hobby became a calling.
Today we run two custom-built trailers and a team of five, but the philosophy hasn't changed: low and slow wins every time. We use only hardwood logs, no pellets, no shortcuts, and every brisket gets a full 14-hour smoke before it touches a cutting board.
